Light and Healthy Dinner for 2

Hey y'all, so if you follow me on snapchat (which you totally should) then you'll know I've been cooking a lot more. I love to do my wife like duties of cooking for Grant when I can. And since I closed my storefront, I am home way more at dinner time these days. Now I'm no food photographer, but I want to keep this blog very well rounded of my lifestyle so it's time I share some more from within my kitchen. If you didn't catch my spaghetti squash recipe, you should be sure and check that out, too! So this is an example of when I cook for us at home. Except we also eat a lot of chicken, beef, pork and other seafood. This meal is a little light on the meat side compared to what we normally eat. The salad is made with red lettuce salad. It's become my absolute favorite because of flavor and texture. Then I browned in a skillet some onions, mushroom and red bell peppers. My Diet Overview!

Since I get a lot of questions about the diet portion of my fitness journey, I wanted my first blog in my diet category to be a little broad.  I can then in my future posts and after hearing more of your questions become more specific :) So the main points I hit on my diet are as follows: I do not go out to eat Monday - Friday Lunch (Friday Evening starts my weekend!) I only drink water, coffee, crystal light, and maybe an occasional low calorie gatorade during the week.  No sweet tea, no sodas, no alcohol, beer, wine or liquor.  On the weekends (primarily only Friday evening and Saturday), I only normally add in a little wine, some vodka and maybe a few sugar free red bull's. Every once in a while I'll Sunday Funday, but usually after Friday evening and Saturday, I'm ready to get back to the grind on Sunday and start a fresh new week! Fresh fruits and vegetables are a total must every single day. I probably consume anywhere from 4-6 of the smoothies that I make weekly. 3 Ingredient Twice Baked Spaghetti Squash

So snaps for my very FIRST recipe blog!  Yes, I made dinner this evening and I just had to share this super easy 3 ingredient recipe I came up with! So 2 days ago I made Grant and I a  cream whole 30 bacon and garlic spaghetti squash casserole.  Although the recipe is not mine, I did get it off of my pinterest which took me to paleoglutenfree.com.  So here is the recipe that started me on this whole spaghetti squash thing. So, I had purchased a really large spaghetti squash and had half of it leftover that I had already baked and softened from this recipe a few days before.  So tonight when I made hamburger steak with mushrooms and onion as well as asparagus, I decided to get creative with my extra spaghetti squash! What you will need: Spaghetti Squash (Already baked once in the oven at 350 degrees with a small amount of water at the bottom of the pan) Can of Tomatoes (this low sodium one by Hunt's is my personal favorite to use) Shredded Mozzarella Cheese (do NOT get the fat free because this is one food item where the fat free tastes fat free) All I did was scrape out all of the softened spaghetti squash...Read More

My Fitness Journey

I am so excited to share my fitness journey in more detail with each of you through my lifestyle blog.  The truth is, I have struggled and had to work very hard to maintain my weight since a very young age.  I would easily say my freshman year of high school is when I was no longer "naturally skinny", but because of that, I have learned to be very disciplined and created some healthy fitness habits along the way. 3 years ago I reached my all time heaviest.  I decided then to change my lifestyle.  I am proud to say I have lost 38 pounds and am in the best shape of my life! The truth is - there's no special secret to my regiment.  I eat healthy and work out regularly.  I do not take diet pills or follow any fad or crash course diets.  I believe that eating is 75% of the equation whether you are trying to lose weight or tone up.  The other 25% comes from cardio and weights.  Notice I said "and weights".  Cardio is only going to burn calories and increase your stamina and get your heart rate up, where weights will help build muscle.  The more muscle (of course in a feminine, not bulky way...Read More

At Home Fitness Dance Party!

Hey y'all! Happy Friday! This week has been super busy and my body is feeling it from working out every day and putting in extra hours at work, too. So if you follow me on snapchat or keep up with my instagram stories, this video will look a little familiar. Bucky was way too much of the live action to not document it haha. If you've followed along with me for a bit now, you will know that I lost 38 pounds and toned up into the best shape of my life for my wedding! This picture was actually taken while we were on our honeymoon. It has now been almost 6 months since our big day and I have still maintained the same weight. For me, I have to work hard even at the maintenance so I like to not make my work outs so routine that I can still make them fun. I do go on 2 mile walks with my husband after work probably 2-3 days a week (which is great multi purpose quality time!) and then I lift at the gym 2-3 days a week.
